Participated in the Florida Hospital Healthy 100 Gourmet Soirée held at the Rosen Shingle Creek in Orlando. It was a Celebrity Chef Event hosted by Chef Robert Irvine from the Food Network. 40 local and talented chefs participated in this event. We were challenged to create a healthy chicken and tofu dish for our 8 guests and we had one hour to do so. I was awarded the group from Tupperware! Well, we were challenged again when they changed the hour to 30 minutes. All went well and I was very fortunate to have had a great table that assisted me in my/our success. I did Jamaican Jerk Chicken with Mango-Pineapple Salsa with Jicama -Chayote Squash Slaw. The Tofu dish was a Thai BBq Tofu Napoleon with Spicy Almond-Coconut Milk. The food came out excellent! I can’t wait until next year!
